Recipe of the Day 06/06

Veggie and Cheese Quesadillas by Susan Pesznecker
Prep time: 15 minutes
Cook time: 15 minutes
Serves: 6+

Ingredients: 
Vegetable oil
Small (6-8") flour quesadillas
Cheddar Cheese, grated
Sweet onion, sliced thin
Red, orange, and/or yellow sweet pepper, julienned
1 yellow zucchini; peeled, seeded, and julienned
1 carrot, julienned or grated
8 mushrooms, sliced
Black olives, sliced
Refried red beans
Salsa
Salt, pepper, and red pepper flakes
Avocado wedges (optional)

   Oil a large skillet very lightly --use a cast iron skillet if you have one. Place the pan over medium heat.
Lay a flour tortilla in the skillet. Spread layer of grated cheese on the tortilla then add your choice of vegetables and refried beans. Spread small dollops of salsa over the vegetable mixture. Season with salt, pepper, and a few red pepper flakes. Top with more cheese and a second flour tortilla.
   Cook for several minutes --until the tortilla browns and the cheese begins to melt. Use a pancake turner to flip the quesadilla, and brown the other side.
   To serve, cut into fourths and arrange on a dinner plate like a big round sun. Offer avocado and additional salsa if desired.

**Hint: If preparing several of these for a group, place the finished quesadillas on a cookie sheet in a barely warm ove. You can them like this for 30 minutes or so while cooking a large batch.
