Fresh Herbal Sun Teas

Fresh Herbal Sun Teas by Susan Pesznecker


Dazzle family and friends with an assortment of sparkling iced teas: capture midsummer energy by brewing the teas under the sun.


2-4 tablespoons fresh herbs (mint, raspberry leaves, lemon balm, thyme, chamomile, etc.), coarsely chopped
Spices: cinnamon stick, whole cloves, black peppercorns, whole cardamom, whole allspice, citrus peel, etc., crushed slightly in a mortar and pestle
1 cup sugar
Lemon, sliced
Sugar


In a quart Mason jar, combine herbs and spices. Fill jar with cold water and set outdoors in direct sunlight for at least 8 and up to 24 hours.
Make simple syrup by boiling 1 cup sugar and 1 cup water until dissolved. Chill.
Strain tea into cold glasses. Sweeten to taste with simple syrup and garnish with lemon slices.
